The planning process was the most daunting part but we decided on 4 flavors: marble, red velvet, chocolate stout (aka Guinness cupcakes), and vanilla raspberry filled.
The Plan:
- Bake 2 dozen cupcakes each week for the month of April
- Freeze the cupcakes that are made at the beginning of the month
- Thaw out any cupcakes starting Wednesday April 29th
- Decorate and package the cupcakes for transport April 30th - May 1st
- Wedding: May 1st 7:00pm.
It all sounds so easy...
First up: Fudge Marble. The recipe was supposed to make 24 but I only ended up with 21 since I am too batter happy when filling the cups. They came out pretty big. I have a lot of extra fudge glaze so I might need to compensate later and make another batch. They are cooling and waiting to be packaged for the freezer.
